
During the last few months, I’ve been trying and playing around with various recipes to help me with my fitness journey. I’m also very lazy so I needed to find recipes that were both delicious and easy to make (lol). So, if you are in a similar situation to me, why not try out this scrumptious lemon chicken with home made tzatziki sauce?!
This recipe is light, full of flavor and a great alternative for a high protein-low carb lunch or dinner meal. Let’s get to it!
Ingredients:
- 1 block chicken (breast or thigh, I prefer breast)
- ¾ cup lemon juice
- ½ tablespoon chopped garlic
- 1 teaspoon of olive oil
- Seasonings of your choice (I like parsley, lemon pepper, herb mix)
- 1 teaspoon of cumin powder
- 1 tablespoon dill
- ¼ cup low/0 fat yogurt
- Salad (of your choice)
- Veggies (I like to add cucumber, red onion, red pepper and occasionally black olives)
Directions:
1. Start by cutting your chicken into bite size pieces and placing them into a bowl.
2. Add ½ cup lemon juice on top of the chicken. Add in your garlic, olive oil and seasoning. Mix well.
3. Let sit in the fridge for around 10 minutes (the longer the better, as the lemon juice absorbs into the chicken)

4. Once chilled, take out and place directly on an already preheated pan. This process will go quick, so make sure to constantly stir the chicken so they do not burn. It will take around 7-8 minutes for the chicken to fully brown and be cooked all the way through. If it’s brown on the outside but not cooked on the inside, just lower the heat and continue to stir.

5. Fill a bowl with your veggies (you can also opt for rice as well). I use packs from the super market. If you like, include other veggies of your taste (this time I only had cucumbers on hand).
6. Place chicken on top of your salad.

7. To make the tzatziki sauce: take ¼ cup of yogurt and put it in something you can mix it with. I use a measuring cup for ease.
8. Put the rest of the ¼ lemon juice in the yogurt and mix until smooth. Taste and if too tangy, add more yogurt.

9. Incorporate the dill (most essential for the traditional tzatziki flavor!) Dill is most easily found at the store Kaldi, which I have found at OPA and AEON Mall in Takasaki.

10. Add cumin and other species if you desire (like graham masala, paprika, parsley etc. I get a nice herb mix from Gyomu Super along with their lemon pepper seasoning and put it on basically everything I eat!)



11. Pour the sauce over the chicken and salad- voila!
